Ingredients

Scale

Chicken and Seasoning

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 1 tsp dried Italian herbs
  • 2 tbsp olive oil

Sauce and Gnocchi

  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lb potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Garnish

  • Fresh basil leaves

Instructions

  1. Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces and season with salt, pepper, and dried Italian herbs. Sauté the chicken until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. Sauté the garlic: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, stirring constantly to avoid burning and bitterness.
  3. Deglaze the pan: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet with a wooden spoon. These bits add great flavor to the sauce.
  4. Cook the gnocchi: Add the potato gnocchi to the skillet and bring the mixture to a simmer. Cook for 3-4 minutes, stirring occasionally, until the gnocchi starts to become tender.
  5. Add the cream: Reduce heat to medium-low and pour in the heavy cream. Stir gently to combine and let the sauce simmer for 2-3 minutes until it thickens slightly.
  6. Combine chicken and cheese: Return the cooked chicken to the skillet and add the grated Parmesan cheese. Stir well until the cheese melts and the chicken is heated through.
  7. Adjust seasoning and serve: Taste and adjust salt and pepper as needed. Garnish with fresh basil leaves before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or milk, but the sauce will be less rich.
  • Feel free to add vegetables such as spinach or mushrooms for extra nutrition and flavor.
  • If you prefer, fresh gnocchi can be used instead of store-bought.
  • Be cautious not to burn the garlic to avoid bitterness in the sauce.
  • Use freshly grated Parmesan for best flavor and melt.
