Liquids & Seasonings

  • 2 cups beef broth
  • 2 cups water
  • 3 tablespoons brown sugar
  • 1½ teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ¾ teaspoon black pepper

Grains

  • 1⅓ cups instant rice (see recipe notes for substituting long grain white or brown rice)

  • Chopped fresh parsley

Instructions

  1. Brown the beef: In a large pot, cook the ground beef with chopped onion and minced garlic over medium heat for 7-8 minutes until the beef is fully browned and onions are translucent. Drain any excess liquid and return the pot to the stove.
  2. Add vegetables and liquids: Stir in the chopped bell peppers, tomato sauce, diced tomatoes with their juice, beef broth, water, brown sugar, Italian seasoning, garlic powder, salt, and pepper. Bring the mixture to a boil.
  3. Simmer the soup: Reduce heat to low and let the soup simmer uncovered for 20 minutes to allow the flavors to meld and the peppers to soften.
  4. Cook the rice: Stir in the instant rice and continue simmering for another 5 to 10 minutes, or until the rice is tender. If you prefer a thinner soup, add additional beef broth at this stage. Adjust seasoning with extra salt and pepper as needed.
  5. Serve: Ladle the soup into bowls and garnish with freshly chopped parsley or freshly grated Parmesan cheese for extra flavor and freshness.

  • You can substitute instant rice with long grain white or brown rice, but increase cooking time accordingly and add more liquid.
