Ingredients

Scale

Fritter Bites

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)

Glaze

  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or apple juice

Instructions

  1. Preheat and Prep: Preheat your oven to 400°F and grease a baking sheet generously with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon until fully combined.
  3. Combine Wet Ingredients: In a large bowl, whisk the melted unsalted butter and granulated sugar until smooth. Then add the egg, vanilla extract, and unsweetened applesauce, whisking until the mixture is homogenous.
  4. Mix Batter: Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined to avoid overmixing. Gently fold in the finely diced apples to distribute evenly.
  5. Portion Batter: Using a tablespoon measure, scoop out the batter and drop each portion a few inches apart on the prepared baking sheet to allow room for spreading.
  6. Bake the Bites: Bake in the preheated oven for 10 minutes until lightly golden and set.
  7. Make the Glaze: While the bites bake, whisk together the powdered sugar and apple cider (or apple juice) until the glaze is thin and pourable.
  8. Glaze and Broil: Remove the baking sheet from the oven and turn the broiler to high. Brush some of the glaze over the warm fritter bites, letting it drip down the sides. Place the baking sheet under the broiler and broil for 2 to 4 minutes, rotating the pan frequently until the glaze caramelizes and bubbles up.
  9. Final Glaze: Remove from the oven and evenly brush the remaining glaze over the tops of the fritter bites for extra sweetness and shine.
  10. Set and Serve: Allow the glazed fritter bites to sit for 15 minutes so the glaze can firm up. Serve warm or at room temperature as a delicious snack or dessert.

Notes

  • Use Honeycrisp or Gala apples for a good balance of sweetness and texture.
  • Make sure not to overmix the batter to keep the fritters light and tender.
  • Watch the fritters closely while broiling to prevent burning the glaze.
  • The glaze caramelizes quickly, so rotate the pan often for even browning.
  • Store leftovers in an airtight container at room temperature and consume within 2 days for best freshness.
