Beef and Seasoning
- 1½–2 pounds beef stew meat (cut into cubes)
- 2 tablespoons flour
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
Cooking
- ¼ cup olive oil (divided)
- ½ onion (chopped)
- 2 garlic cloves (minced)
Sauce
- ½ cup red wine
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch
- 2 tablespoons water
- Coat the Beef: Toss the beef cubes with flour, salt, garlic powder, onion powder, and black pepper in a large bowl until the meat is evenly coated with the seasoning mixture.
- Heat Oil and Brown Beef: Warm 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the beef cubes in a single layer—do this in batches if necessary to avoid crowding—and brown the meat on all sides. Remove browned beef and set aside on a plate.
- Sauté Onion and Garlic: Add the remaining 2 tablespoons of olive oil to the skillet. Add the chopped onion with a pinch of salt and cook for a few minutes until softened. Then add the minced garlic and cook for an additional minute until fragrant.
- Deglaze with Wine: Pour in the red wine and allow it to sizzle. Scrape up any browned bits from the bottom of the pan to incorporate their flavor into the sauce.
- Add Broth and Worcestershire Sauce: Stir in the beef broth and Worcestershire sauce. Bring the mixture to a boil and then reduce heat to simmer.
- Thicken the Sauce: In a small bowl, whisk together the cornstarch and water until smooth. Stir this slurry into the simmering sauce to help thicken it.
- Simmer with Beef: Return the browned beef to the pan, cover, and let it simmer for about 40 minutes until the beef becomes tender.
- Final Thickening: Uncover the pan and continue to simmer uncovered for another 3-4 minutes until the sauce is thickened to your desired consistency.
- Serve: Spoon the beef tips and gravy over warm mashed potatoes or noodles for a delicious meal.
Notes
- For best flavor, use a good quality dry red wine such as Cabernet Sauvignon or Merlot.
- If you want a thicker gravy, you can increase the cornstarch mixture slightly, but add gradually to avoid over-thickening.
- Be sure not to overcrowd the pan when browning beef to ensure proper caramelization.
- This dish pairs beautifully with creamy mashed potatoes or egg noodles but can also be served over rice.
- Leftovers keep well refrigerated for 3-4 days and reheat nicely on the stovetop.
