Ingredients

Scale

Beef and Seasoning

  • 2 pounds beef stew meat (cut into cubes)
  • 2 tablespoons flour
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper

Cooking

  • ¼ cup olive oil (divided)
  • ½ onion (chopped)
  • 2 garlic cloves (minced)

Sauce

  • ½ cup red wine
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Coat the Beef: Toss the beef cubes with flour, salt, garlic powder, onion powder, and black pepper in a large bowl until the meat is evenly coated with the seasoning mixture.
  2. Heat Oil and Brown Beef: Warm 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the beef cubes in a single layer—do this in batches if necessary to avoid crowding—and brown the meat on all sides. Remove browned beef and set aside on a plate.
  3. Sauté Onion and Garlic: Add the remaining 2 tablespoons of olive oil to the skillet. Add the chopped onion with a pinch of salt and cook for a few minutes until softened. Then add the minced garlic and cook for an additional minute until fragrant.
  4. Deglaze with Wine: Pour in the red wine and allow it to sizzle. Scrape up any browned bits from the bottom of the pan to incorporate their flavor into the sauce.
  5. Add Broth and Worcestershire Sauce: Stir in the beef broth and Worcestershire sauce. Bring the mixture to a boil and then reduce heat to simmer.
  6. Thicken the Sauce: In a small bowl, whisk together the cornstarch and water until smooth. Stir this slurry into the simmering sauce to help thicken it.
  7. Simmer with Beef: Return the browned beef to the pan, cover, and let it simmer for about 40 minutes until the beef becomes tender.
  8. Final Thickening: Uncover the pan and continue to simmer uncovered for another 3-4 minutes until the sauce is thickened to your desired consistency.
  9. Serve: Spoon the beef tips and gravy over warm mashed potatoes or noodles for a delicious meal.

Notes

  • For best flavor, use a good quality dry red wine such as Cabernet Sauvignon or Merlot.
  • If you want a thicker gravy, you can increase the cornstarch mixture slightly, but add gradually to avoid over-thickening.
  • Be sure not to overcrowd the pan when browning beef to ensure proper caramelization.
  • This dish pairs beautifully with creamy mashed potatoes or egg noodles but can also be served over rice.
  • Leftovers keep well refrigerated for 3-4 days and reheat nicely on the stovetop.
