Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and spray an 8×8-inch baking pan with non-stick spray. Set the pan aside while you prepare the batter.
  2. Mix base ingredients: In a large bowl, combine the melted coconut oil, maple syrup, all-purpose flour (or gluten-free flour), quick oats, coconut sugar, baking powder, and salt. Mix thoroughly until all ingredients are evenly incorporated.
  3. Press bottom crust: Using your hands, press about two-thirds of the oat mixture evenly into the bottom of the prepared pan. Make sure the layer is compact and relatively flat to form a sturdy base for the bars.
  4. Add preserves layer: Gently spread the raspberry preserves on top of the pressed crust, leaving a ½-inch border around the edges to prevent the preserves from scalding during baking.
  5. Add crumble topping: Crumble the remaining one-third of the oat mixture over the preserves evenly. Lightly press the crumbles with your hands to help them adhere but still remain crumbly.
  6. Bake: Place the pan on the center rack of your preheated oven and bake for 25 to 30 minutes, until the top is lightly browned and golden.
  7. Cool and serve: Remove from oven and let the bars cool in the pan on a wire rack until completely set. Once cooled, cut into squares and serve.
