Instructions

  1. Prepare the Oven and Dish: Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray to prevent sticking and ease cleanup.
  2. Cook the Vegetables and Beef: Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook, stirring frequently, until translucent, about 3 to 5 minutes.   3. Combine Beans and Seasoning: In a large bowl, mix the refried beans with the burrito seasoning packet until well combined. Add this mixture to the skillet with the browned beef and stir thoroughly.
  4. Mix Soup and Sour Cream: In a separate bowl, combine the condensed cream of mushroom soup and sour cream. This mixture will add creaminess to the casserole layers.
  5. Assemble the Casserole Layers: In the prepared casserole dish, start with a layer of tortilla chips to cover the bottom evenly. Then spoon half of the meat and bean mixture over the chips. Next, spread half of the soup and sour cream mixture on top. Sprinkle with 1 cup of the shredded Mexican cheese, and add half of the salsa evenly.
