Crust
- 2 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 3/4 cup butter, melted
Filling
- 2 (8-ounce) blocks cream cheese, softened
- 1/4 cup sour cream
- 1 (8-ounce) tub Cool Whip, thawed overnight in the fridge
- 1 cup confectioner’s sugar
- 2 teaspoons vanilla extract
Topping
- 1 (21-ounce) can cherry pie filling
- Preheat and Prepare Crust: Preheat oven to 350°F (177ºC) and spray a 9×13 inch baking dish with nonstick cooking spray. In a large bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the baking dish to form an even crust.
- Bake Crust: Bake the crust in the preheated oven for 12 to 14 minutes or until the edges turn golden brown. Remove from oven and cool completely on a wire rack, approximately 45 minutes.
- Mix Cream Cheese Layer: In a large mixing bowl, use an electric mixer to cream together softened cream cheese and sour cream until smooth and evenly combined.
- Add Sweeteners: Add the confectioner’s sugar and vanilla extract to the cream cheese mixture. Beat for 2 minutes until the mixture is fluffy and smooth.
- Fold in Cool Whip: Gently fold in the thawed Cool Whip until well combined, being careful not to overmix to preserve its light texture.
- Assemble and Chill: Spread the cream cheese mixture evenly over the completely cooled crust. Refrigerate the assembled dessert for a minimum of 4 hours, preferably overnight, to allow it to set.
- Top with Cherry Filling and Serve: Just before serving, spread the cherry pie filling evenly over the cream cheese layer. Cut into squares and enjoy.
