Ingredients

Scale

Cake

  • 280g all-purpose flour
  • 280g granulated sugar
  • 35g cocoa powder
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 200ml warm soy milk
  • 100ml orange juice
  • 1.5 tbsp apple cider vinegar
  • 120g vegetable oil
  • 1 tsp vanilla extract
  • 2 tsp orange extract

Mousse

  • 400g silken tofu
  • 400g dark chocolate, chopped
  • 150ml orange juice (for mousse)
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tsp orange extract

Ganache

  • 100g dark chocolate
  • 100g soy cream or milk

Instructions

  1. Preheat and prepare dry ingredients: Preheat the oven to 180°C (350°F). Sieve together the all-purpose flour, granulated sugar, cocoa powder, baking soda, and salt in a large mixing bowl to ensure even distribution.
  2. Prepare the wet ingredients: Warm the soy milk slightly and add the apple cider vinegar. Allow this mixture to curdle for about 10 minutes, creating a vegan ‘buttermilk’ effect. In a separate bowl, combine orange juice, vegetable oil, vanilla extract, and orange extract.
  3. Combine wet and dry ingredients: Create a well in the sieve-mixed dry ingredients and pour the wet soy milk mixture along with the orange and oil mixture. Whisk everything together until the batter is smooth and uniform.
  4. Bake the cake: Line an 8-inch cake tin with parchment paper and pour the batter into it. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.
  5. Slice the cake: Once cooled, slice the cake horizontally to create two even layers for filling with mousse.
  6. Make the mousse: Blend silken tofu, orange juice, orange extract, vanilla extract, and maple syrup until completely smooth. Melt the chopped dark chocolate gently and fold it into the tofu mixture until fully incorporated to create a creamy orange chocolate mousse.
  7. Assemble first cake layer and mousse: Pour the mousse evenly onto the bottom cake layer and spread it gently. Chill in the refrigerator to set.
  8. Add second cake layer and chill: Place the second layer of cake on top of the mousse. Refrigerate again to let the mousse firm up and layers set.
  9. Prepare ganache: Heat soy cream or milk until just simmering, then pour it over chopped dark chocolate. Stir gently until the mixture is smooth and glossy.
  10. Finish the cake: Pour the ganache evenly over the top of the chilled cake, allowing it to drip down the sides slightly. Refrigerate briefly to let the ganache set before slicing.
  11. Serve: Slice and enjoy this indulgent yet vegan-friendly chocolate and orange mousse cake!

Notes

  • This cake is fully vegan, making use of silken tofu and soy milk as dairy substitutes.
  • Be sure to use good-quality dark chocolate with a high cocoa content for the best flavor.
  • Allowing the soy milk and vinegar mixture to curdle is crucial for the cake’s texture.
  • The cake can be stored in the refrigerator for up to 3 days.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • If you prefer, fresh orange zest can be added to the batter or mousse for extra citrus aroma.
  • Ensure all ingredients are at room temperature before mixing for best results.
