Ingredients

Scale

Cake

  • 1 box white cake mix

Filling

  • 5 tbsp butter
  • ½ cup light brown sugar
  • 3 tsp ground cinnamon
  • 2½ tsp clear vanilla extract
  • 14 oz can sweetened condensed milk

Frosting

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 2 tsp clear vanilla flavoring
  • 2 ½ cups powdered sugar
  • 2 tsp half and half

Instructions

  1. Cake Preparation: Prepare the white cake mix according to package instructions. Pour the batter into a greased 9×13-inch pan and bake as directed. Once baked, allow the cake to cool completely.
  2. Make the Filling: In a saucepan, melt 5 tablespoons of butter over medium heat. Stir in the light brown sugar, ground cinnamon, clear vanilla extract, and sweetened condensed milk. Cook gently, stirring frequently until the mixture is smooth and well combined. Remove from heat.
  3. Assemble the Cake: Using the handle of a wooden spoon, poke holes all over the surface of the cooled cake, spacing them about an inch apart. Slowly pour the warm cinnamon filling evenly over the cake, making sure it seeps into the holes to infuse the cake with flavor.
  4. Prepare the Frosting: In a large bowl, beat together the softened cream cheese and butter until smooth and creamy. Add the clear vanilla flavoring, powdered sugar, and half and half. Continue beating until the frosting is light and fluffy.
  5. Frost the Cake: Spread the cream cheese frosting evenly over the top of the filled cake, covering it completely.
  6. Chill and Serve: Refrigerate the cake for at least 1 hour to let the filling set and the flavors meld. Slice and serve chilled. Enjoy your delicious cinnamon roll poke cake!

Notes

  • Ensure the cake is fully cooled before poking holes to prevent it from breaking apart.
  • Use room temperature cream cheese and butter for smoothest frosting.
  • The poke holes should be evenly spaced for uniform filling distribution.
  • Refrigerate leftovers covered tightly to maintain freshness for up to 3 days.
  • You can warm the cinnamon filling slightly if it thickens before pouring.
