Cloud Bread Mixture
- 4 large egg whites
- 2 oz cream cheese, softened
- 2 tbsp granulated sweetener
- 0.5 tsp vanilla extract
- 0.25 tsp cream of tartar
Food Coloring
- 1–2 drops gel food coloring per bowl (pink, blue, yellow, green)
- Preheat Oven & Prep: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Cream Cheese Mixture: In a small bowl, whisk together the softened cream cheese, 1 tablespoon of the sweetener, and vanilla extract until the mixture is smooth and creamy, ensuring no lumps remain.
- Whip Egg Whites: Using a clean mixing bowl and an electric mixer on medium-high speed, beat the egg whites with cream of tartar until foamy (about 1-2 minutes). Gradually add the remaining 1 tablespoon of sweetener and continue beating until stiff, glossy peaks form, which should take around 5-7 minutes.
- Fold Gently: Carefully fold the cream cheese mixture into the whipped egg whites in two additions using a rubber spatula. Fold just until combined to maintain the airy texture.
- Divide & Color: Divide the batter evenly into 3 to 4 small bowls. Add 1-2 drops of different gel food coloring to each bowl (pink, blue, yellow, green), and gently fold each until the color is just incorporated.
- Assemble Loaf & Swirl: On the prepared baking sheet, dollop spoonfuls of each colored batter alternately in a 6-8 inch loaf shape. Use an offset spatula or knife to gently swirl the colors together a few times to create a pastel marble effect.
- Bake to Perfection: Bake the loaf in the preheated oven for 25-30 minutes, or until the cloud bread is puffed, golden brown around the edges, and fully set in the center.
- Cool & Serve: Allow the loaf to cool completely on the baking sheet before slicing and serving to maintain its delicate texture.
Notes

- Be gentle when folding to keep the batter airy and light.
- You can customize food coloring shades or omit for a plain white loaf.
- Store leftovers in an airtight container for up to 2 days, best enjoyed fresh.
- This recipe is naturally gluten-free and low-carb, perfect for keto diets.
