Instructions

  1. Prepare Ingredients: Bring the cream cheese and butter (or coconut butter) to room temperature so they become soft and easier to blend.
  2. Mix Ingredients: Combine the softened cream cheese or coconut butter, butter, powdered sugar or erythritol, and instant coffee until smooth. Using a hand mixer is recommended for the smoothest texture, although stirring with a fork is acceptable.
  3. Shape the Truffles: Spread the mixture into a container for bars or squares, or freeze for a few minutes until firm enough to scoop small balls using a mini cookie scoop. Place the balls onto a parchment-lined plate.
  4. Freeze to Firm: Freeze the shaped truffles or bars until they become firm enough to handle.
  5. Optional Chocolate Coating: If desired, melt the chocolate chips and optionally stir in half a teaspoon of oil to achieve a smoother sauce. Dip the truffles or bars in the melted chocolate and allow to set. For bite-sized pieces, cut the bars in half once the chocolate has solidified.
