Instructions

  1. Sauté Vegetables: Heat olive oil in a large Dutch oven over medium-high heat. Add the diced onion and celery, sautéing until they become soft and translucent. Then stir in the minced garlic and cook for an additional minute to release its aroma.
  2. Brown the Beef: Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned evenly and no pink remains, ensuring the meat is fully cooked through.
  3. Add Remaining Ingredients: Stir in the potatoes, carrots, drained green beans, tomato paste, diced tomatoes with juices, black-eyed peas, corn, and seasonings including Italian seasoning, smoked paprika, chili powder, salt, and pepper. Pour in 4 cups of beef broth and mix well.
  4. Simmer the Soup: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low and let the soup simmer gently for 14-16 minutes or until the potatoes are tender when pierced with a fork.
  5. Adjust and Serve: Taste the soup and adjust seasoning if necessary. Serve hot, optionally garnishing with fresh herbs or sour cream as desired.
