  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced

Seasonings and Liquids

  • 1 packet taco seasoning
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel (tomatoes with green chilies)
  • 3 cups chicken broth

Dairy

  • 1 block (8 oz) cream cheese, softened
  • 1 cup heavy cream (or half & half)
  • 1 1/2 cups shredded cheddar cheese

Seasoning and Garnishes

  • Salt and pepper to taste
  • Optional toppings: tortilla chips, avocado, sour cream, cilantro

Instructions

  1. Brown the Meat and Onion: In a large pot, cook the ground beef with the diced onion over medium heat until the meat is fully browned and the onion is softened. Drain off any excess grease to keep the soup from becoming oily.
  2. Add Garlic and Seasoning: Stir in the minced garlic and one packet of taco seasoning, coating the meat well to build the foundational flavors of the soup.
  3. Add Vegetables and Broth: Pour in the diced tomatoes, Rotel (tomatoes with green chilies), black beans, corn, and chicken broth. Bring the mixture to a simmer to combine the ingredients and start melding the flavors.
  4. Incorporate Cream Cheese: Reduce the heat to low and add the softened cream cheese. Stir continuously until the cream cheese is fully melted and the soup turns smooth and creamy.
  5. Add Cream and Cheese: Pour in the heavy cream (or half & half) and sprinkle in the shredded cheddar cheese. Stir until the soup becomes creamy, cheesy, and well blended.
  6. Season to Taste and Serve: Taste the soup and adjust salt and pepper as desired. Serve the soup hot with your favorite toppings like tortilla chips, sliced avocado, sour cream, and cilantro for added texture and flavor.

  • Ground turkey can be used as a leaner alternative to ground beef for a healthier version.
