Ingredients

Scale

Chicken & Sauce

  • 2 lbs boneless skinless chicken breasts (34 large chicken breasts)
  • 8 oz cream cheese, softened
  • 2 tablespoons butter
  • 1 (10 oz) can cream of mushroom soup
  • 2 garlic cloves, minced
  • 1 cup white wine (pinot grigio or sauvignon blanc)
  • 1/2 cup chicken broth or water
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon salt

Pasta & Garnish

  • 10 oz angel hair pasta, cooked and drained
  • Chives (optional)
  • Red pepper flakes (optional)

Instructions

  1. Prepare the chicken: Place the 2 lbs of boneless skinless chicken breasts into the slow cooker or Instant Pot with slow cooker setting.
  2. Mix the sauce: In a medium bowl, combine the softened cream cheese, butter, cream of mushroom soup, minced garlic, white wine, chicken broth (or water), Italian seasoning, granulated garlic, and salt. Mix thoroughly with a spatula or hand mixer until mostly smooth, allowing for some lumps.
  3. Add sauce to chicken: Pour the creamy sauce mixture evenly over the chicken breasts in the slow cooker, then cover with the lid.
  4. Cook the chicken: Set the slow cooker to low and cook for 6 to 7 hours, or set to high and cook for 3 to 4 hours. If using an Instant Pot, select the slow cooker function and cook accordingly.
  5. Shred the chicken: Once cooking is complete, remove the lid and use a fork, tongs, or spatula to stir the sauce and break the chicken breasts into bite-sized chunks.
  6. Cook the pasta: Prepare the angel hair pasta according to the package instructions, then drain.
  7. Serve and garnish: Plate the pasta and spoon the creamy chicken and sauce over it. Garnish with chopped chives and red pepper flakes if desired for added flavor and color.

Notes

  • For a thicker sauce, you can remove the lid and cook on high for an additional 10-15 minutes to reduce the liquid.
  • Substitute cream of mushroom soup with cream of chicken soup for a slightly different flavor profile.
  • White wine can be substituted by additional chicken broth if alcohol is not preferred.
  • Adding vegetables like spinach or mushrooms during cooking is an easy way to incorporate more nutrients.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or microwave.
