Ingredients

Scale

Brownie Layer

  • 1 (18 ounce) box of brownie mix (plus ingredients required on box, typically eggs, oil, and water)

Filling

  • 8 ounces full-fat, brick-style cream cheese, room temperature

Coating & Decoration

  • 3 cups chocolate melting wafers
  • Sprinkles for decorating

Instructions

  1. Prepare Brownies: Prepare the brownies in a 9×13 inch pan following the package instructions. Once baked, allow the brownies to cool completely before proceeding.
  2. Remove Soft Center: Using a spoon or scoop, remove the soft, baked brownie center into a large mixing bowl, leaving behind the firmer edges in the pan.
  3. Combine with Cream Cheese: Add the room temperature cream cheese to the brownie pieces and beat them together with a hand mixer or stand mixer until the mixture is smooth and no lumps of cream cheese remain.
  4. Form Truffle Balls: Roll the brownie and cream cheese mixture into approximately 1 tablespoon-sized balls, placing them evenly spaced on a parchment-lined baking sheet. Freeze the balls for at least 30 minutes or until solid.
  5. Melt Chocolate Wafers: Place the chocolate melting wafers in a microwave-safe bowl and heat in 20 second increments, stirring between each, until the chocolate is fully melted and smooth.
  6. Coat Truffles: Using a fork, dip each frozen truffle ball into the melted chocolate to fully coat it. Gently tap the fork to remove excess chocolate and place the coated truffle back onto the parchment-lined baking sheet. Immediately add sprinkles on top before the chocolate sets.
  7. Set Chocolate Coating: Refrigerate the coated truffles for 15 to 20 minutes to allow the chocolate shell to harden completely before serving.

Notes

  • Using room temperature cream cheese is essential to ensure a smooth mixture without lumps.
  • Make sure brownies are completely cooled before mixing to avoid melting the cream cheese.
  • Freezing the truffles before dipping helps keep their shape and prevents melting during coating.
  • Chocolate melting wafers are recommended for easy melting and smooth coating, but good quality chocolate chips can be used as a substitute.
  • Store truffles refrigerated in an airtight container for up to 5 days.
