  • Chopped scallions, to taste
  • Salt & pepper, to taste
  • Lime wedges, for serving (optional)

Instructions

  1. Sauté Aromatics: Add the olive oil and finely chopped onion to a large pot over medium-high heat. Cook for about 5 minutes until the onion is softened and translucent, stirring occasionally.
  2. Add Ginger, Garlic, and Curry Paste: Stir in the grated fresh ginger, minced garlic, and Thai red curry paste. Cook for approximately 30 seconds to release their flavors and aromas, stirring constantly to prevent burning.
  3. Add Broth, Water, Lime, and Noodles: Pour in the chicken or vegetable broth, water, and lime juice into the pot. Add the uncooked rice noodles. Increase the heat to high and bring the mixture to a gentle boil.
  4. Add Coconut Milk and Chicken & Simmer: Stir in the full-fat coconut milk and shredded cooked chicken. Lower the heat to medium-low and allow the soup to simmer for 10 minutes, letting all the flavors meld together and the noodles cook through.
  5. Finish with Fresh Herbs and Seasonings: Stir in the torn fresh basil, chopped cilantro, and scallions. Season with salt and pepper to taste, adjusting the flavors as needed.
