Ingredients

Scale

For the Dough:

  • 4 1/2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 3 1/2 cups + 1 tablespoon all-purpose flour
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk (warmed to 110°F)
  • 1 large egg (room temperature)

For Egg Wash:

  • 1 beaten egg, for brushing the tops

For Garlic Butter Topping:

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt (for finishing)

Instructions

  1. Prepare the Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set it aside to ensure the rolls won’t stick during baking.
  2. Make Garlic Butter for the Dough: In a small pot, melt 4 1/2 tablespoons of unsalted butter and add 2 tablespoons of minced garlic. Cook for 1-2 minutes until the garlic is fragrant, then remove from heat and let it cool while preparing the remaining ingredients.
  3. Mix and Knead Dough: In a stand mixer bowl, combine 3 1/2 cups plus 1 tablespoon all-purpose flour, 3 tablespoons chopped parsley, 1 tablespoon sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon fine sea salt. Add warmed milk (110°F), 1 large room temperature egg, and the cooled garlic butter mixture. Using a dough hook, knead on low speed for 10-12 minutes until the dough is smooth, soft, and slightly tacky. If too sticky, add flour one tablespoon at a time until workable.
  4. Shape the Rolls: Divide the dough evenly into 12 portions (about 67 grams each). Shape each into smooth balls by pinching the seam at the bottom to seal them tightly. Place the dough balls into the prepared pan, cover with plastic wrap or a clean kitchen towel, and set in a warm spot to rise until doubled in size, approximately 1-2 hours.
  5. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the risen rolls.
  6. Apply Egg Wash and Bake: Brush the tops of the risen rolls with the beaten egg wash to promote browning. Bake the rolls in the preheated oven for 20-30 minutes or until golden brown on top.
  7. Prepare Garlic Butter Topping: While the rolls bake, melt 2 tablespoons unsalted butter in a pot, add 1 tablespoon minced garlic, and cook for 1-2 minutes until fragrant. Remove from heat and stir in 1 tablespoon chopped fresh parsley.
  8. Finish and Serve: Once the rolls come out of the oven, immediately brush them generously with the prepared garlic butter. Sprinkle flaky sea salt over the tops if desired. Serve the rolls warm for the best flavor and texture.

Notes

  • When measuring flour, spoon it lightly into the measuring cup and level it off with a knife to avoid packing, which can cause dry dough.
  • For a softer crust, cover the dough balls tightly during rising to prevent drying out.
  • You can substitute fresh parsley with dried parsley if fresh is unavailable, but reduce quantity by half.
  • If you prefer a stronger garlic flavor, increase the minced garlic in the topping by a teaspoon.
  • Using whole milk yields richer rolls; 2% milk can be used for a lighter option.
