Ingredients

Scale

Chicken and Seasoning

  • 2 lbs chicken tenders, thighs, or breast, cut into 3-inch pieces
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp red pepper flakes

Garlic Parmesan Butter Sauce

  • 1 stick butter (8 tbsp)
  • 810 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1 tbsp hot sauce (adjust to taste)
  • 1/3 cup fresh parsley, minced

Instructions

  1. Soak Skewers: Soak wooden skewers in water for at least 30 minutes before using to prevent burning during cooking.
  2. Prepare Chicken and Seasoning: In a small bowl, combine paprika, garlic powder, onion powder, salt, pepper, and red pepper flakes. In a large bowl or ziptop bag, toss the cut chicken pieces with olive oil and the seasoning mixture, making sure all pieces are coated evenly.
  3. Skewer Chicken: Thread the seasoned chicken pieces tightly onto the soaked skewers, leaving no gaps to keep them juicy. Trim skewers if necessary to fit into your air fryer.
  4. Make Garlic Parmesan Butter Sauce: In a microwave-safe bowl, melt butter partially with minced garlic. Stir in red pepper flakes, hot sauce, parsley, and grated parmesan until well combined. If the sauce separates, incorporate 1-2 tablespoons of softened butter to re-emulsify.
  5. Baste and Par-Cook: Reserve one-third of the sauce for initial basting. Use this portion to baste the chicken skewers before cooking. Save the remaining sauce for basting after cooking to avoid cross-contamination.
  6. Cook Chicken in Air Fryer: Place 2-3 skewers in the air fryer basket at 400°F (204°C). Cook for 5 minutes. Remove, flip the skewers, and baste with reserved sauce. Return to air fryer for an additional 2 minutes.
  7. Finish Cooking and Baste Again: Flip skewers back, baste again with the sauce, and cook for a final 5-6 minutes or until the internal temperature of the chicken reaches 165°F (74°C), ensuring they are fully cooked and juicy.
  8. Serve: After cooking, brush the chicken with the clean reserved garlic parmesan sauce, sprinkle with extra parmesan cheese, and serve hot.

Notes

  • Soaking wooden skewers prevents them from burning in the air fryer.
  • Ensure chicken pieces are uniform in size for even cooking.
  • Adjust hot sauce and red pepper flakes according to your preferred heat level.
  • Check internal chicken temperature with a meat thermometer to ensure safety and juiciness.
  • You can substitute chicken breasts or thighs depending on your preference.
  • If you don’t have an air fryer, these skewers can be grilled or broiled in an oven, but cooking times will vary.
