Ingredients

Scale

Protein and Vegetables

  • 1 pound ground turkey
  • 2 medium zucchinis, sliced into half-moons
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced

Seasonings and Others

  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Crushed red pepper flakes to taste (optional)

Instructions

  1. Heat olive oil: In a large skillet over medium heat, warm 1 tablespoon of olive oil until shimmering.
  2. Sauté onion: Add the chopped half onion and cook, stirring occasionally, for 3-4 minutes until softened and translucent.
  3. Add garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Brown turkey: Crumble the ground turkey into the skillet and cook, stirring, for 6-8 minutes until the meat is fully browned and cooked through.
  5. Cook zucchini: Add the sliced zucchini to the skillet and stir to combine; cook for 4-5 minutes until the zucchini starts to soften but still retains some bite.
  6. Season and simmer: Sprinkle in the dried oregano, salt, black pepper, and crushed red pepper flakes if using. Pour in 1/4 cup chicken broth to add moisture and flavor. Reduce heat to low and simmer for 3-4 minutes, allowing flavors to meld and zucchini to soften further.
  7. Add Parmesan cheese: Remove from heat and sprinkle the grated Parmesan cheese over the mixture. Stir until the cheese melts and is well incorporated.
  8. Final taste and serve: Taste the skillet and adjust seasoning as desired with additional salt or pepper. Serve immediately while hot.

Notes

  • Adding crushed red pepper flakes is optional; adjust to your spice preference.
