Ingredients

Scale

Fruit and Sweeteners

  • 2 large apples (preferably Fuji or Honeycrisp), peeled and diced
  • 1/4 cup honey or maple syrup as a natural sweetener
  • 1 tablespoon honey (for coating apples)

Dry Ingredients

  • 1 cup whole wheat flour or almond flour for a healthier twist
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 2 eggs or flax eggs for a vegan option
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil or olive oil

Optional

  • Crushed nuts or oats for added crunch

Instructions

  1. Prepare the apples: In a mixing bowl, combine the peeled and diced apples with 1 tablespoon of honey and 1 teaspoon of cinnamon. Toss well to coat the apples evenly and set the mixture aside to allow flavors to meld.
  2. Mix the batter: In a separate bowl, whisk together the whole wheat or almond flour, baking powder, salt, nutmeg, and vanilla extract. Add in the eggs and coconut oil, stirring until you achieve a smooth batter. Carefully fold in the coated apple pieces to distribute them evenly throughout the batter.
  3. Preheat and cook: Preheat your air fryer to 375°F (190°C). Using a spoon or cookie scoop, form small batches of the batter and place them into the air fryer basket with space between each fritter. Sprinkle with crushed nuts or oats if desired for extra crunch. Cook for 10-12 minutes, flipping the fritters halfway through cooking, until they are golden brown and cooked through.

Notes

  • You can substitute whole wheat flour with almond flour to make these fritters gluten-free and add healthy fats.
  • For a vegan version, replace regular eggs with flax eggs (1 tablespoon ground flaxseed + 3 tablespoons water per egg).
  • Adjust the sweetness by increasing or decreasing honey or maple syrup according to taste.
  • Make sure to space fritters well in the air fryer basket for even cooking and crispness.
  • These fritters are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
