Chocolate Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix the filling: In a bowl, thoroughly combine the almond flour, natural peanut butter, salt (if using unsalted peanut butter), maple syrup, and vanilla extract until a uniform dough forms.
  2. Form the buckeye balls: Roll the dough into small balls, roughly the size of a walnut, then place them on a tray and refrigerate for 30 minutes to firm up.
  3. Melt the chocolate coating: In a small microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted.
  4. Dip the buckeyes: Use a fork to dip each chilled ball into the melted chocolate, covering about two-thirds of the ball, then lift and place onto a lined tray to set. Repeat this for all the buckeye balls.
  5. Chill to set: Refrigerate the dipped buckeyes for at least 15 minutes to allow the chocolate coating to harden completely.
  6. Storage: Keep the buckeyes stored in an airtight container in the fridge and consume within one week for best freshness.
