  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro leaves (optional)
  • 1 tablespoon water (optional)
  • 3/4 cup cheddar cheese

Instructions

  1. Preheat Oven: Preheat the oven to 450°F (232°C) to prepare for baking the bean dip later.
  2. Blend Ingredients: Combine the olive oil, cooked black beans, non-fat Greek yogurt, salt, cumin, chili powder, lime juice, cilantro (if using), and 1 tablespoon water (if needed) in a food processor or blender. Blend until smooth, adjusting with a little more water if necessary to achieve a creamy but not watery consistency.
  3. Transfer and Add Cheese: Pour the smooth bean mixture into a baking dish (8.5 x 6.5 inches or 8×8 inch works well). Evenly sprinkle the cheddar cheese on top of the bean dip.
