Cheesecake Mixture
- 8 oz. fat free cream cheese, softened
- 1/2 cup non-fat vanilla Greek yogurt
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 8 oz. tub low-fat cool whip, thawed
Oreos
- 24 Oreo thins (12 whole, 12 crushed)
- Prepare the muffin tin: Line a muffin tin with 12 paper cupcake liners to serve as your molds for the cheesecake bites.
- Add Oreo base: Place one whole Oreo thin into the bottom of each cupcake liner and set aside.
- Beat cream cheese: In a medium mixing bowl, use a hand mixer to beat the softened cream cheese until smooth and creamy.
- Combine wet ingredients: Add the salt, vanilla extract, and non-fat vanilla Greek yogurt to the cream cheese and continue beating until well combined.
- Mix in crushed Oreos: Pour in the remaining 12 Oreos, which have been crushed, and beat again until fully incorporated into the mixture.
- Fold in cool whip: Gently fold the thawed low-fat cool whip into the cheesecake mixture until evenly combined without deflating it.
- Assemble bites: Evenly scoop the cream cheese mixture over the Oreo bases in each cupcake liner and, if desired, top with additional crushed Oreos for garnish.
- Freeze and serve: Place the muffin tin in the freezer and freeze for at least 3 hours or until the bites are firm. Serve chilled and enjoy your healthy no-bake Oreo cheesecake bites!
Notes
- You can substitute vanilla Greek yogurt with plain Greek yogurt and add a little honey for sweetness if preferred.
- Make sure the cream cheese is softened to avoid lumps in the mixture.
- For easier removal, briefly dip the bottom of the muffin tin in warm water before removing the cupcake liners.
- Store leftovers in an airtight container in the freezer for up to one week.
- To make it dairy-free, consider using dairy-free cream cheese and whipped topping alternatives.
