Instructions

  1. Sauté Onions and Garlic: Heat oil in a large soup pot over medium heat. Add diced onions and cook for 1-2 minutes until they begin to soften. Then add minced garlic and cook for an additional 30 seconds until fragrant.
  2. Add Broth and Main Ingredients: Pour in the beef broth, then add the cubed russet potatoes, petite diced tomatoes, tomato sauce, and all the dried seasonings including parsley, oregano, thyme, salt, and pepper. Bring the mixture to a boil over medium-high heat.
  3. Simmer with Vegetables: Once boiling, reduce the heat to medium-low. Stir in the frozen mixed vegetables and cook the soup gently for 20-25 minutes, or until the potatoes are tender and flavors have melded. Remove from heat and serve hot.
