Eggs and Base
- 8 large eggs
- 1 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 teaspoon hot sauce (optional, adjust to taste)
- 1 teaspoon paprika plus extra for garnish
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
Cheese and Bacon
- 1 cup shredded sharp cheddar cheese
- 4 slices cooked bacon, crumbled

- Cook the Eggs: Place eggs in a saucepan and cover with cold water. Bring the water to a boil. Once boiling, turn off the heat, cover the saucepan, and let the eggs sit for 10 to 12 minutes. Drain the hot water, cool the eggs under cold running water, peel them, and chop into small pieces.
- Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce (if using), paprika, garlic powder, onion powder, salt, and black pepper. Stir until well blended. Add the chopped eggs and mix gently until the eggs are well coated with the seasoned mayonnaise mixture.
- Add Cheese & Bacon: Fold in the shredded sharp cheddar cheese and half of the crumbled cooked bacon to the egg mixture, ensuring even distribution.
- Bake: Preheat your oven to 350°F (175°C). Spread the egg mixture evenly into a greased baking dish. Place it in the oven and bake uncovered for 15 to 20 minutes, or until the dip is hot and bubbly throughout.
- Garnish & Serve: Remove from the oven and sprinkle the top with the remaining bacon pieces, finely chopped green onions, and a pinch of paprika for color and flavor. Serve the dip warm alongside crackers, chips, or toasted bread slices.
