Protein
- 3–4 pieces boneless chicken breasts
Grains
- 1 cup long-grain white rice
Liquids and Dairy
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
Vegetables
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 1 cup frozen peas and carrots
Others
- 2 tablespoons butter
- Salt and pepper to taste
- Sauté Base: Set the Instant Pot to sauté mode. Melt the butter, then add the chopped onions and minced garlic. Cook for about 2-3 minutes until they become fragrant and slightly translucent.
- Sear Chicken: Season the boneless chicken breasts with salt and pepper. Place them in the pot and sear each side for 2-3 minutes until they are golden brown, which helps to lock in flavor.
- Add Rice and Broth: Stir in the rinsed long-grain white rice and pour in the low-sodium chicken broth. Be sure to scrape the bottom of the pot to loosen any browned bits to prevent getting a burn warning during pressure cooking.
- Pressure Cook: Secure the Instant Pot lid and set the valve to sealing. Cook on high pressure for exactly 10 minutes for perfectly cooked chicken and rice.
- Quick Release: Perform a quick pressure release immediately once the cooking time is up. Carefully remove the lid when the pressure indicator shows it is safe to do so.
- Finish Dish: Stir in the heavy cream and frozen peas and carrots until everything is well combined. Taste and adjust seasoning with additional salt and pepper if needed. Serve warm for a creamy, comforting meal.
Notes
- Rinse the rice under cold water to remove excess starch, which helps keep the rice from becoming gummy.
- Use low-sodium broth to control the saltiness of the dish better.
- For a lighter version, replace heavy cream with half-and-half or milk, but the dish may be less creamy.
- Frozen peas and carrots can be substituted with fresh vegetables if preferred, added after cooking.
- Ensure to scrape the bottom of the Instant Pot after sautéing and adding ingredients to avoid the burn warning during pressure cooking.
