Chicken and Marinade Ingredients

  • 4 chicken thighs (or chicken breast fillets)
  • 1 tbsp olive oil (plus more for frying)
  • 2 tbsp apple juice
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp dried basil
  • 1/4 tsp dried parsley
  • 1/4 tsp dried sage
  • 1/4 tsp dried marjoram
  • 1 bay leaf
  • 1/2 tsp garlic powder

Instructions

  1. Prepare the Marinade: In a bowl or tupperware container, combine olive oil, apple juice, dried oregano, dried thyme, dried basil, dried parsley, dried sage, dried marjoram, bay leaf, and garlic powder. Stir well to mix all the herbs and seasonings thoroughly.
  2. Marinate the Chicken: Add the chicken thighs to the herb and oil mixture. Use a spoon or your hands to coat each piece evenly with the marinade. For deeper flavor, cover and refrigerate for 30 minutes to 2 hours; this step is optional but recommended.
  3. Preheat the Skillet: Drizzle a little olive oil in a skillet and heat it over medium heat until warm and shimmering, preparing to pan-fry the chicken.
  4. Cook the Chicken: Using tongs, place the chicken thighs skin side down (rounded side) into the skillet. Fry for 6-8 minutes without moving to develop a golden crust. Flip the chicken and cook for another 6-8 minutes or until the internal temperature reaches 165°F (74°C) using a meat thermometer.
  5. Rest and Serve: Remove the chicken from the skillet and allow it to rest for 5-10 minutes to let the juices redistribute. Serve hot with your favorite sides for a delicious Italian-inspired meal.

Notes

  • The marinade time can be shortened or skipped if you’re in a hurry, but marinating for at least 30 minutes enhances flavor.
  • Using chicken thighs gives a juicier result, but breast fillets can be used for a leaner option.
  • Ensure the skillet is hot before adding the chicken to prevent sticking and to create a nice sear.
  • Use a meat thermometer to guarantee the chicken is cooked through and safe to eat.
  • Pair with roasted vegetables, a fresh salad, or garlic mashed potatoes for a complete meal.
