Ingredients

Scale

Chicken and Vegetables

  • 2 cups cooked chicken (shredded or diced)
  • 8 ounces mushrooms (sliced, button or cremini)
  • 4 cloves garlic (minced)

Dairy and Cheese

  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Seasonings and Oil

  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper (to taste)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the casserole.
  2. Sauté Mushrooms: Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they turn golden brown and release their moisture, about 5-7 minutes, stirring occasionally.
  3. Add Garlic: Mix in the minced garlic with the mushrooms and sauté for another 1-2 minutes until fragrant, making sure not to burn the garlic by stirring frequently.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed mushrooms and garlic, heavy cream, dried thyme, dried oregano, salt, and pepper. Stir well until all ingredients are evenly incorporated.
  5. Assemble Casserole: Grease a 9×13-inch casserole dish and spread the chicken mixture evenly across the bottom of the dish.
  6. Add Cheese Topping: Sprinkle the shredded mozzarella and grated Parmesan cheese generously over the top of the chicken mixture, covering the surface evenly.
  7. Bake: Place the casserole dish in the preheated oven and bake for 25-30 minutes until the cheese is melted, bubbly, and golden brown on top.
  8. Garnish and Serve: Remove the casserole from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving to add a fresh and colorful touch.

Notes

  • You can use either button or cremini mushrooms based on your preference for flavor and texture.
  • For an extra creamy casserole, you can add a little cream cheese or substitute part of the mozzarella with cream cheese.
  • Ensure the chicken is fully cooked before starting this recipe; leftover roasted or grilled chicken works great.
  • Feel free to add other keto-friendly vegetables like spinach or zucchini if desired.
  • If you want more herb flavor, you can add fresh thyme or oregano along with or in place of dried herbs.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, bake at 350°F (175°C) until warmed through and cheese is bubbly.
