Ingredients

Scale

Potatoes

  • 4 large russet potatoes, scrubbed clean and patted dry
  • 4 tablespoons olive oil
  • 1.5 tablespoons sea salt (for baked potato skins)

Steak Bites

  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 4 tablespoons avocado oil, divided

Garlic Cajun Butter Sauce

  • 2 tablespoons garlic, minced (about 810 cloves)
  • 6 tablespoons butter, softened
  • 2 tablespoons Cajun seasonings (low sodium preferred)
  • 1/21 teaspoon red pepper flakes
  • 2 wedges lemon, juice of

Parmesan Cream Sauce

  • 1 1/2 cups heavy cream
  • 2/3 cup Parmesan, grated

Garnish

  • 2 tablespoons fresh parsley, minced

Instructions

  1. Prepare Potatoes: Preheat oven to 425°F (220°C). Rub potatoes with olive oil and sea salt, then place on a baking sheet. Bake for 45–60 minutes, until skins are crispy and potatoes are tender inside.
  2. Season Steak: While potatoes bake, cut steak into bite-sized cubes. Season with kosher salt, black pepper, and 1 tablespoon avocado oil. Set aside.
  3. Sear Steak Bites: Heat a skillet over medium-high heat with 2 tablespoons avocado oil. Sear steak bites in batches until browned and cooked to your liking. Remove and set aside.
  4. Make Garlic Cajun Butter Sauce: In the same skillet, melt butter. Add minced garlic, Cajun seasoning, and red pepper flakes, stirring continuously until fragrant. Return steak bites to the pan and toss to coat evenly in the sauce. Finish by adding lemon juice and stir well.
  5. Prepare Parmesan Cream Sauce: In a small saucepan, heat heavy cream over medium heat. Stir in grated Parmesan until melted and smooth, creating a creamy topping sauce.
  6. Assemble Potatoes: Slice baked potatoes open and fluff the insides with a fork. Drizzle each potato with the warm Parmesan cream sauce, then top with the garlic Cajun steak bites.
  7. Garnish and Serve: Sprinkle fresh parsley over the loaded potatoes and serve immediately while hot.

Notes

  • Choose a well-marbled steak like ribeye or sirloin for maximum flavor and tenderness.
  • Adjust red pepper flakes to control the heat level of the dish.
  • Use low sodium Cajun seasoning to moderate salt content.
  • For a lighter version, substitute heavy cream with half-and-half or evaporated milk, though sauce will be less rich.
  • Leftover steak bites can be refrigerated and added to salads or sandwiches.
