Ingredients

Scale

Chicken

  • 2 tablespoons Olive oil
  • 2 Boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Paprika

Vegetables

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1/2 cup Onion (diced)
  • 2 cloves Garlic (minced)

Sauce

  • 3/4 cup Chicken broth
  • 1/2 cup Heavy cream
  • 1/2 cup Parmesan cheese (grated)

Instructions

  1. Heat the oil: Heat olive oil in a skillet over medium heat until shimmering to prepare for cooking the chicken.
  2. Cook the chicken: Season chicken with salt, black pepper, garlic powder, and paprika. Add to the skillet and cook for 6–8 minutes until browned and fully cooked through. Remove chicken from skillet and set aside.
  3. Sauté aromatics: In the same skillet, sauté diced onion and minced garlic for 2–3 minutes until they become fragrant and softened.
  4. Steam the vegetables: Add broccoli and cauliflower florets along with chicken broth to the skillet. Cover and let steam for 6–8 minutes until the veggies are tender yet retain some bite.
  5. Add cream and cheese: Stir in heavy cream and grated Parmesan cheese. Bring the mixture to a gentle simmer to allow the sauce to thicken slightly.
  6. Combine chicken and sauce: Return the cooked chicken to the skillet and stir until everything is well combined and coated with the creamy sauce and vegetables.
  7. Heat through: Continue heating for another 2–3 minutes until the entire dish is hot and ready to serve.
  8. Serve: Serve warm and enjoy the comforting and creamy chicken, broccoli, and cauliflower skillet.

Notes

  • You can substitute heavy cream with half-and-half for a lighter sauce but the texture will be slightly less creamy.
  • For a low-carb option, this dish is naturally suitable as it contains mostly protein and vegetables.
  • Make sure not to overcook the broccoli and cauliflower to keep a nice bite and prevent mushiness.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
  • Grated Parmesan cheese adds a nice umami flavor—freshly grated cheese is preferable for best melting and taste.
