Ingredients

Scale

Eggs and Bacon

  • 10 eggs
  • 5 strips of bacon

Vegetables and Oil

  • 1 large sweet potato, cubed
  • 1/2 medium red onion, diced
  • 1 tbsp avocado oil
  • Salt and pepper, to taste

Instructions

  1. Prep Vegetables: Dice the red onion and cube the sweet potato into small, evenly sized pieces to ensure even cooking.
  2. Cook Bacon: Fry the bacon strips in a frying pan over medium-low heat until they are fully cooked and crispy. This will render bacon grease used for flavoring the vegetables.
  3. Boil Eggs: While the bacon cooks, fill a pot with cold water and bring it to a gentle boil.
  4. Cook Eggs: Carefully lower the eggs into the boiling water and cover the pot. Cook for exactly 7 minutes to achieve soft boiled eggs with firm whites and creamy yolks.
  5. Ice Bath: Immediately transfer the eggs to an ice bath after 7 minutes to stop the cooking process and make peeling easier.
  6. Prepare Pan for Veggies: Remove the cooked bacon from the pan, leaving the bacon grease behind for flavor in the vegetables.
  7. Sauté Onions: Add diced red onions to the bacon grease and sauté over medium-low heat until soft and fragrant, enhancing sweetness and aroma.
  8. Add Oil and Sweet Potatoes: Remove the onions from the pan and add avocado oil. Heat it over medium heat, then add cubed sweet potatoes.
  9. Cook Sweet Potatoes: Toss the potatoes to coat with oil and season with salt and pepper. Continue cooking over medium heat, tossing frequently, for about 20 minutes until the potatoes are cooked through and tender.
  10. Combine Ingredients: Turn off the heat and return the sautéed onions and crumbled crispy bacon back into the pan with the sweet potatoes. Mix well for combined flavors.
  11. Peel Eggs and Portion Meals: Peel the boiled eggs carefully. Divide the sweet potato hash evenly into 5 meal prep containers, placing 2 eggs in each container for a balanced paleo breakfast meal.

Notes

  • For softer or harder eggs, adjust boiling time by plus or minus 1 minute.
  • If preferred, substitute bacon with turkey bacon for a leaner option.
  • Sweet potatoes can be pre-roasted to reduce stove time.
  • Store meal prep containers in the refrigerator for up to 4 days.
  • Reheat sweet potato hash gently in a skillet or microwave before eating.
