For the Taco-Seasoned Ground Beef:

  • 1 lb lean ground beef
  • 1 packet taco seasoning (or about 2 tbsp)
  • 1/2 cup water

Instructions

  1. Cook Your Rice: Cook 1 cup rice per bowl according to package directions using stovetop or rice cooker. Rinse white rice until water runs clear before cooking. After cooking, add a squeeze of lime and a pinch of salt to enhance flavor. Keep rice hot and fluffy.
  2. Brown & Season the Beef: Heat a large skillet over medium-high heat. Add 1 lb ground beef, breaking it up as it cooks until browned, about 5 to 7 minutes. Drain excess fat. Return skillet to heat and sprinkle in taco seasoning and 1/2 cup water. Stir well and simmer for 3 to 5 minutes until the beef becomes saucy and glossy. If mixture looks dry, add an additional 1 to 2 tablespoons of water.
  3. Prep the Toppings: Rinse and drain black beans. Drain canned corn or thaw frozen corn. Chop fresh cilantro. Optionally, warm beans and corn briefly in the microwave for 30 to 60 seconds to avoid cooling the bowl.
  4. Assemble the Burrito Bowl: Spoon hot rice into each bowl. Add 1/2 cup of the seasoned ground beef, 1/4 cup black beans, and 1/4 cup corn in separate neat sections. Sprinkle with 1/4 cup shredded cheddar cheese to allow it to melt slightly. Top with 2 tablespoons salsa or pico de gallo and 1 tablespoon fresh chopped cilantro. Garnish with a lime wedge if desired.
