  • 23 cups turkey or chicken stock
  • 1 cup heavy cream

Instructions

  1. Prepare the Vegetables: Heat olive oil in a large pot over medium heat. Add the minced garlic, chopped onion, celery, and carrots. Sauté until the vegetables are softened and fragrant, about 5–7 minutes.
  2. Add Sausage: Stir in the sliced andouille sausage and cook for an additional 3–4 minutes, allowing the sausage to brown slightly and release its flavors.
  3. Incorporate Turkey and Seasoning: Add the shredded smoked turkey along with 3 to 4 tablespoons of Tony’s No Salt Seasoning. Mix well to combine all the flavors in the pot.
  4. Add Tomato and Stock: Stir in the chopped red tomato and pour in 2 to 3 cups of turkey or chicken stock. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15–20 minutes so the flavors meld beautifully.
  5. Finish with Cream: Pour in 1 cup of heavy cream and cook for another 5 minutes, stirring occasionally, until heated through. Taste and adjust seasoning if needed.
  6. Serve: Ladle the soup into bowls and serve hot. Optionally, garnish with fresh herbs like parsley or thyme for an extra burst of flavor and color.
