  • 1/31 cup hot water

  • 12 tablespoons sriracha
  • 12 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional for less spice)
  • Optional: 2 teaspoons chili garlic sauce

Instructions

  1. Boil water: Bring a large pot of water to a rolling boil to prepare for cooking the noodles efficiently.
  2. Cook noodles: Add the brown rice noodles to the boiling water and cook according to the package instructions until tender.
  3. Saute garlic: While noodles cook, finely mince the garlic and add it to a sauté pan with 1 tablespoon of oil over low heat.
  4. Develop flavors: Sauté the garlic gently for about 2 minutes until golden brown, then add the grated ginger and sauté for an additional 1 minute to release fragrance.
  5. Prepare sauce: Remove the pan from heat and add the peanut butter, tamari, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and optional chili garlic sauce to the pan.
  6. Whisk sauce: Whisk together all sauce ingredients starting with 1/3 cup hot water, adding more hot water incrementally to achieve your desired sauce consistency. The hot water helps the peanut butter blend smoothly.
  7. Taste and adjust: Sample the sauce and adjust seasoning as needed with extra soy sauce for saltiness or more sriracha for heat.
  8. Combine with noodles: Drain the noodles and add about half of the sauce to them, mixing thoroughly to coat the noodles evenly.
  9. Adjust sauciness: Add more sauce gradually according to your preference, ensuring the noodles don’t get overdressed initially.
