Wrap Ingredients

  • 4 large egg whites (132g)
  • 3 tablespoons unflavored pea protein (or pea protein blend, 19g)
  • 1 tablespoon whole husk psyllium (7g)
  • 1/2 cup fresh spinach (15g)
  • Dashes of garlic powder (optional)
  • Dashes of onion powder (optional)

Instructions

  1. Preheat the griddle: Preheat your griddle over a low to medium flame and lightly grease it with coconut oil or non-stick spray to prevent sticking.
  2. Blend ingredients: Combine the egg whites, pea protein, psyllium husk, fresh spinach, and optional garlic and onion powders in a blender or food processor. Blend until the mixture is smooth and well combined.
  3. Cook the first wrap: When the griddle is hot enough (you’ll know when drops of water sizzle on contact), pour half of the batter onto the griddle. Use the back of a spoon to spread the batter thinly and evenly.
  4. Flip the wrap: After about 2-3 minutes, once the edges start to set and the bottom is lightly browned, carefully flip the wrap to cook the other side briefly until done.
  5. Cook the second wrap: Repeat the process with the remaining batter to make the second wrap.
  6. Serve and store: Enjoy your spinach protein wraps immediately or store them in the refrigerator for several days. They can be filled with your favorite ingredients or used as a nutritious snack.

Notes

  • Use fresh spinach for best flavor and texture; you can lightly wilt it before blending for a smoother batter if preferred.
  • Adjust the thickness of the batter with a splash of water or more egg whites if necessary.
  • For added flavor, consider adding herbs or spices like black pepper or paprika.
  • Store wraps in an airtight container in the refrigerator for up to 4 days.
  • These wraps can be warmed up on a griddle or microwave before serving.
