Noodles
- 8 oz (225g) rice noodles (or lo mein/udon noodles)
Beef
- 1 lb (450g) beef sirloin or flank steak, thinly sliced
- 2 tbsp cornstarch
- 3 tbsp vegetable oil, divided
Vegetables
- 1 red bell pepper, thinly sliced
- 2 cups (120g) broccoli florets
- 3 green onions, sliced (plus extra for garnish)
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
Sauce
- 1/4 cup (60ml) soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp honey or brown sugar
- 2 tbsp rice vinegar (or lime juice)
- 1 tbsp sesame oil
- 1/4 tsp red pepper flakes (optional, for heat)
- Cook the Noodles: Bring a pot of water to a boil and cook the rice noodles according to the package instructions until tender. Drain and set aside.
- Prepare the Beef: In a bowl, toss the thinly sliced beef with cornstarch, ensuring each piece is evenly coated to create a light crust when seared.
- Sear the Beef: Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and sear for 2 to 3 minutes on each side until browned and cooked through. Remove the beef from the skillet and set aside.
- Cook the Vegetables: Using the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the sliced red bell pepper and broccoli florets. Stir-fry for 4 to 5 minutes until the vegetables are tender but still crisp.
- Add Aromatics: Add the sliced green onions, minced garlic, and grated ginger to the skillet. Cook for an additional 1 to 2 minutes until fragrant, stirring frequently to prevent burning.
- Prepare the Sticky Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, honey (or brown sugar), rice vinegar (or lime juice), sesame oil, and red pepper flakes if using. Mix until combined.
- Combine Beef and Sauce: Return the cooked beef to the skillet with the vegetables. Pour the sticky sauce over the mixture.
- Add Noodles and Toss: Add the cooked noodles to the skillet. Toss everything together thoroughly to ensure the noodles, beef, and vegetables are well coated with the sticky sauce.
- Serve: Divide the sticky beef noodles into bowls. Garnish with extra sliced green onions and sesame seeds if desired. Serve immediately and enjoy!
Notes
- For best texture, use fresh vegetables and avoid overcooking to keep them crisp.
- You can substitute beef with chicken or tofu for a different protein option.
- Adjust the red pepper flakes quantity to control the spiciness according to your taste preference.
- If rice noodles aren’t available, lo mein or udon noodles make excellent alternatives.
- To make it gluten-free, use tamari or gluten-free soy sauce and check that hoisin sauce is gluten-free.
