Ingredients

Scale

Noodles

  • 8 oz (225g) rice noodles (or lo mein/udon noodles)

Beef

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced
  • 2 tbsp cornstarch
  • 3 tbsp vegetable oil, divided

Vegetables

  • 1 red bell pepper, thinly sliced
  • 2 cups (120g) broccoli florets
  • 3 green onions, sliced (plus extra for garnish)
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated

Sauce

  • 1/4 cup (60ml) soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar (or lime juice)
  • 1 tbsp sesame oil
  • 1/4 tsp red pepper flakes (optional, for heat)

Instructions

  1. Cook the Noodles: Bring a pot of water to a boil and cook the rice noodles according to the package instructions until tender. Drain and set aside.
  2. Prepare the Beef: In a bowl, toss the thinly sliced beef with cornstarch, ensuring each piece is evenly coated to create a light crust when seared.
  3. Sear the Beef: Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and sear for 2 to 3 minutes on each side until browned and cooked through. Remove the beef from the skillet and set aside.
  4. Cook the Vegetables: Using the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the sliced red bell pepper and broccoli florets. Stir-fry for 4 to 5 minutes until the vegetables are tender but still crisp.
  5. Add Aromatics: Add the sliced green onions, minced garlic, and grated ginger to the skillet. Cook for an additional 1 to 2 minutes until fragrant, stirring frequently to prevent burning.
  6. Prepare the Sticky Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, honey (or brown sugar), rice vinegar (or lime juice), sesame oil, and red pepper flakes if using. Mix until combined.
  7. Combine Beef and Sauce: Return the cooked beef to the skillet with the vegetables. Pour the sticky sauce over the mixture.
  8. Add Noodles and Toss: Add the cooked noodles to the skillet. Toss everything together thoroughly to ensure the noodles, beef, and vegetables are well coated with the sticky sauce.
  9. Serve: Divide the sticky beef noodles into bowls. Garnish with extra sliced green onions and sesame seeds if desired. Serve immediately and enjoy!

Notes

  • For best texture, use fresh vegetables and avoid overcooking to keep them crisp.
  • You can substitute beef with chicken or tofu for a different protein option.
  • Adjust the red pepper flakes quantity to control the spiciness according to your taste preference.
  • If rice noodles aren’t available, lo mein or udon noodles make excellent alternatives.
  • To make it gluten-free, use tamari or gluten-free soy sauce and check that hoisin sauce is gluten-free.
