Strawberry Mixture
- 3/4 cup chopped fresh strawberries
- 3/4 cup dark chocolate chips (or chopped dark chocolate), divided
Coating
- 3/4 cup dark chocolate chips (or chopped dark chocolate), divided
- Optional topping: freeze-dried strawberry powder
- Cook strawberries: Add the chopped strawberries to a pot on the stove set to low-medium heat. Cook for 2-3 minutes, mashing constantly with a metal potato masher until the strawberries break down.
- Melt chocolate with residual heat: Turn off the heat and immediately add 3/4 cup of dark chocolate chips to the pot with the mashed strawberries. Stir well until the chocolate melts completely using the residual heat.
- Chill mixture: Transfer the strawberry-chocolate mixture to a bowl and place it in the refrigerator for 30 minutes to firm up.
- Bring to room temperature: After chilling, mix the mixture well and let it sit at room temperature for 5 minutes to soften slightly for easier shaping.
- Form truffle balls: Scoop 1 tablespoon portions and use your hands (wearing gloves if desired) to roll the mixture into smooth balls. Place each ball on a parchment-lined plate. Repeat until all mixture is used, making about 12 truffles.
- Melt remaining chocolate: Melt the remaining 3/4 cup of dark chocolate chips in a microwave-safe bowl, heating in 20-second intervals and stirring until smooth, or melt gently in a pot on low heat stirring constantly.
- Coat truffles: Using a fork, dip each truffle ball into the melted chocolate, stirring gently to coat completely. Lift and let excess chocolate drip off before placing back onto parchment paper.
- Add optional topping: Sprinkle freeze-dried strawberry powder on top of each coated truffle for extra flavor and visual appeal.
- Set truffles: Refrigerate the coated truffles for at least 45 minutes to allow the chocolate coating to harden before serving.
Notes
- Use fresh, ripe strawberries for the best flavor and natural sweetness.
- Freezing the truffles slightly before coating can help achieve smoother dipping.
- You can substitute dark chocolate with semi-sweet chocolate if preferred.
- Store truffles in an airtight container in the refrigerator for up to 1 week.
- For a smoother finish, temper the chocolate before coating.
