Instructions

  1. Prepare Cream Cheese or Coconut Cream: If using cream cheese, leave it out to reach room temperature for easier blending. If using coconut cream, open the can and check that the contents are thick and creamy, avoiding any cans with hard, flaky cream which are unsuitable for mousse.
  2. Prep Strawberries: Remove the stems from the strawberries and either blend or mash them until smooth to create a fresh strawberry puree.
  3. Combine Ingredients: In a food processor, blender, or with a hand mixer, add the strawberry puree, cream cheese or coconut cream, yogurt (or substitute), powdered sugar (or sugar-free alternative), and optional vanilla bean paste. Blend or mix until the mixture is completely smooth and creamy.
  4. Chill the Mousse: Transfer the mousse into serving dishes and refrigerate for several hours. As it chills, the mousse will thicken significantly to a light, airy consistency that’s perfect for serving.
