Deliciously simple Sweet Potato Rounds topped with creamy goat cheese and fresh herbs. These roasted sweet potato slices make a perfect appetizer or side dish that balances savory and sweet flavors with a delightful creamy texture.

Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes (about 500g)

Toppings and Seasoning

  • 100g creamy goat cheese
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp fresh herbs (such as thyme or rosemary)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even roasting.
  2. Prepare Sweet Potatoes: Wash and peel the sweet potatoes, then slice them into rounds about half an inch thick for even cooking and perfect bite-sized pieces.
  3. Toss with Seasoning: In a large bowl, toss the sweet potato rounds with the extra virgin olive oil, salt, and freshly ground black pepper until all slices are evenly coated, enhancing their flavor.
  4. Arrange on Baking Sheet: Place the rounds in a single layer on the prepared baking sheet. Avoid overcrowding to ensure they roast evenly and develop a crispy exterior.
  5. Roast Sweet Potatoes: Roast the rounds for 25-30 minutes until they turn golden brown and are tender when pierced, flipping them halfway through cooking to brown both sides.
  6. Add Goat Cheese and Herbs: Remove the baking sheet from the oven and sprinkle goat cheese and fresh herbs over each round. Return the sheet to the oven for an additional 5 minutes to melt the cheese slightly and infuse the herbs’ aroma.
  7. Serve: Serve the sweet potato rounds warm as an appetizer, snack, or side dish and enjoy the creamy, herbaceous, and sweet flavors combined.

Notes

  • For added texture, consider sprinkling chopped nuts like pecans or walnuts on top before serving.
  • You can substitute goat cheese with feta or cream cheese for a different flavor profile.
  • Fresh herbs like thyme or rosemary add the best aroma, but dried herbs can be used if fresh aren’t available.
  • These rounds can be prepared ahead and reheated in the oven for a few minutes before serving.
  • Adjust seasoning to taste, especially if using salted goat cheese.
