Ingredients

Scale

Dough Ingredients

  • 4 teaspoons active dry yeast
  • ½ cup warm water
  • 1 teaspoon sugar (to activate the yeast)
  • 2 cups milk (scalded and cooled to lukewarm)
  • 3 tablespoons unsalted butter (melted and slightly cooled)
  • ½ cup sugar
  • 7 cups all-purpose flour (up to 8 cups)
  • 2 eggs
  • 2 teaspoons salt

For Brushing and Serving

  • 2 tablespoons unsalted butter (for brushing over the finished rolls)

Cinnamon Honey Butter

  • 1 stick unsalted butter (softened)
  • ¼ cup powdered sugar
  • ¼ cup honey
  • 1 teaspoon cinnamon

Instructions

  1. Activate the yeast: Add the yeast, warm water, and sugar to the bowl of your mixer and lightly whisk. Let it sit for about 10 to 15 minutes until the yeast dissolves and starts to foam, indicating it’s active.
  2. Make the dough: To the same bowl, add the lukewarm scalded milk, melted butter, sugar, eggs, and salt. Using the dough hook attachment, mix everything together for about 1 minute. Gradually add the flour, 2 to 3 cups at a time, mixing thoroughly. Continue adding flour until you have a soft dough that pulls away cleanly from the sides of the bowl — you may need between 7 to 8 cups depending on humidity. Knead until smooth and elastic.
  3. First rise: Transfer the dough to an oiled bowl, cover with a clean damp kitchen towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  4. Prep the baking sheets: Lightly spray two baking sheets with cooking spray to prevent sticking.
  5. Cut into rolls: Punch down the risen dough and turn it onto a floured surface. Divide the dough into two portions for easier handling. Roll each portion out to about ½ inch thickness, trim the edges into a neat rectangle, then cut into squares or rectangles to form about 30 to 35 rolls in total. Place the rolls evenly spaced on the prepared baking sheets.
  6. Second rise: Let the rolls rise again until doubled in size, approximately 45 minutes. Meanwhile, preheat your oven to 350°F (175°C).
  7. Bake the rolls: Bake the rolls for 15 to 20 minutes or until golden brown on top. As soon as they come out of the oven, brush them generously with melted butter to keep them soft and impart rich flavor.
  8. Make the honey cinnamon butter: While the rolls bake, whisk together the softened butter, powdered sugar, honey, and cinnamon in a small bowl until smooth and creamy.
  9. Serve: Serve the warm rolls alongside the cinnamon honey butter for spreading. Enjoy them fresh for the best texture and flavor.

Notes

  • The dough’s flour amount can vary based on humidity and flour brand — add slowly and go by dough texture.
  • Scalding the milk and cooling it to lukewarm helps develop the soft texture of the rolls.
  • Ensure the yeast is bubbly and active before adding other ingredients for proper rising.
  • These rolls freeze well. After baking, cool completely, then freeze in an airtight container. Reheat by warming in the oven wrapped in foil.
  • For a richer flavor, you can substitute some all-purpose flour with bread flour.
  • Use room temperature eggs and butter to ensure smooth mixing.
