Delicious and easy-to-make two ingredient dough cinnamon rolls made with self-raising flour and Greek yogurt. These soft, fluffy rolls are filled with a cinnamon and brown sugar mixture and topped with a sweet icing glaze, perfect for a quick homemade treat.

  • 1 cup self-raising flour
  • 1 cup non fat plain Greek yogurt

Filling

  • 1/4 cup brown sugar
  • 1 Tbsp cinnamon

Glaze

  • 2 Tbsp icing sugar (confectioners sugar)
  • 2 tsp milk

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray the paper to prevent sticking.
  2. Mix Dough Ingredients: In a bowl, combine the self-raising flour and non-fat plain Greek yogurt. If you do not have self-raising flour, use all-purpose flour combined with baking powder and a pinch of salt as a substitute.
  3. Knead and Roll Dough: Mix until the dough forms a ball. It will be slightly sticky. Sprinkle some flour on a flat surface and knead the dough with extra flour until it is no longer sticky. Roll the dough out to approximately 12 inches by 10 inches.
  4. Prepare Filling and Roll Dough: In a small bowl, mix the brown sugar and cinnamon together. Sprinkle this mixture evenly over the rolled out dough. Roll the dough up tightly, then cut the roll into 2 equal pieces.
  5. Cut Rolls: Cut each of the 2 large pieces into 6 smaller pieces, giving a total of 12 cinnamon rolls.
  6. Bake Cinnamon Rolls: Place the cut rolls onto the prepared baking sheet, spaced slightly apart. Bake in the preheated oven for about 18 minutes or until the tops are golden brown.
  7. Prepare and Apply Glaze: In a small bowl, mix the icing sugar with a little milk to create a glaze. Brush this glaze onto the warm cinnamon rolls once they come out of the oven.
  8. Store: Allow the rolls to cool slightly, then store them in a sealed container. Best enjoyed fresh.

Notes

  • You can substitute self-raising flour by using all-purpose flour with 1.5 teaspoons baking powder and a pinch of salt per cup.
