Dough
- 1 cup self-raising flour
- 1 cup non fat plain Greek yogurt
Filling
- 1/4 cup brown sugar
- 1 Tbsp cinnamon
Glaze
- 2 Tbsp icing sugar (confectioners sugar)
- 2 tsp milk
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray the paper to prevent sticking.
- Mix Dough Ingredients: In a bowl, combine the self-raising flour and non-fat plain Greek yogurt. If you do not have self-raising flour, use all-purpose flour combined with baking powder and a pinch of salt as a substitute.
- Knead and Roll Dough: Mix until the dough forms a ball. It will be slightly sticky. Sprinkle some flour on a flat surface and knead the dough with extra flour until it is no longer sticky. Roll the dough out to approximately 12 inches by 10 inches.
- Prepare Filling and Roll Dough: In a small bowl, mix the brown sugar and cinnamon together. Sprinkle this mixture evenly over the rolled out dough. Roll the dough up tightly, then cut the roll into 2 equal pieces.
- Cut Rolls: Cut each of the 2 large pieces into 6 smaller pieces, giving a total of 12 cinnamon rolls.
- Bake Cinnamon Rolls: Place the cut rolls onto the prepared baking sheet, spaced slightly apart. Bake in the preheated oven for about 18 minutes or until the tops are golden brown.
- Prepare and Apply Glaze: In a small bowl, mix the icing sugar with a little milk to create a glaze. Brush this glaze onto the warm cinnamon rolls once they come out of the oven.
- Store: Allow the rolls to cool slightly, then store them in a sealed container. Best enjoyed fresh.
Notes
- You can substitute self-raising flour by using all-purpose flour with 1.5 teaspoons baking powder and a pinch of salt per cup.
- Be careful when kneading to add just enough flour to prevent sticking but keep the dough soft.
- For a dairy-free option, substitute Greek yogurt with a plant-based yogurt that is thick and plain.
- Brush the glaze generously for a sweeter finish or omit for a less sweet treat.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
